Rittergut Ampleben is a historic manor estate in the village of Ampleben, part of the municipality of Kneitlingen in the Wolfenbüttel district of Lower Saxony, Germany.

It stands on the site of the former Burg Ampleben, a medieval water castle first mentioned in the early 14th century that was destroyed in 1425 after the Uetze‑line family’s “robber‑knight” activities led to its capture and burning by the cities of Braunschweig and Magdeburg.

In the 16th century a Renaissance‑style manor was rebuilt on the old castle grounds, and by the late 18th century a new baroque‑classical Herrenhaus was erected in the southern part of the former fortress, set within a small park and surrounded by farm buildings and fields. 

Today the estate still functions as a Vollerwerbslandwirtschaft farm, with the manor serving as a family‑run agricultural and hospitality complex that includes the traditional Landhaus Ampleben and the nearby Seniorenwohnsitz Süd Elm, while the ensemble remains a listed historic group of buildings that shapes the local village image.
